Simple pumpkin donuts

Pumpkin donuts

Truett's preschool studied the letter "D" last week and so we hatched a plan to make donuts. But since it's fall and I'm in love with everything pumpkin, I decided to try and make them with pumpkin :)

They came out dense and chewy and delicious. I think one of the tricks was to add pumpkin pie spices in addition to canned pumpkin which helps people identify with the pumpkin + gives it a seasonal kick. Here is the recipe below (& here is the original recipe I tinkered with).

Simple pumpkin donuts (you can make at home)

1/4 cup buttermilk

2 tablespoons butter

1/2 cup of sugar

1 cup of canned pumpkin 

1 egg

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon ginger

1 teaspoon vanilla extract

2 cups all purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

A quart of vegetable oil for deep frying

Confectioners' sugar for dusting

In a large bowl mix together ingredients up to, but not including, the flour (beat the egg briefly in a small bowl first). Mix together the flour, baking soda & salt in a small bowl. Gradually add the dry ingredients to the wet. This is a roll out dough so you may have to adjust the flour to make sure your dough doesn't stick to the counter (which is where I roll out doughs). Be sure to add only the minimum amount of flour. 

Roll dough to about 3/4 inch and cut into donut shapes (I do not have a donut cutter because, please, so I used a glass + the tip of the vegetable peeler to cut the center holes). Don't worry too much about shape, they look cool all rustic and puffed up anyway.

Heat your oil until hot. I do not use a thermometer in the kitchen so I just drop a few droplets of water into the oil and know it's hot when it begins to pop and sizzle. If you DO have a thermometer, check to make sure your oil is around 375 degrees farenheit. Begin carefully dropping in your donuts but make sure not to overfill the pot. Once one side is golden, flip each donut. 

Drain on a plate with paper towels, cool, then dust with powdered sugar.
